Fish Curry Soup
I made this recipe up one day when I was trying to figure out what to do with some tilapia I bought because it was on sale. I had some frozen seafood/shrimp stock, so I thought I would experiment a bit.
I started with a similar base to the Jamaican curry goat I learned to cook back when I lived in Flatbush, Brooklyn (potatoes, onions, curry powder, cilantro) but then substituted fish instead of goat and added stock to make it more of a soup. Success! I have made this soup many times since then. Sometimes I add in other things: fresh corn chopped off the cob, chopped bell pepper, chopped jalapeno/chile, etc etc.
