Caldo Verde


Caldo Verde is a traditional Portuguese soup. I don’t really remember how I was introduced to this. Maybe from living around a Brazilian community in Somerville, MA? No matter how I first tasted this, it remains one of my favorite simple soups. It’s great on a cool day. It’s also a great way to get your vegetables in the winter! It’s a pretty low effort meal that can last for several days of leftovers. If you find that it’s too much to eat in a couple of days, you can also freeze some for later.

I tend to make this soup extra garlicky and a little on the spicier side. But you should experiment and find out how you like it.

One note about the chorizo: Don’t overcook it! The flavor will leave the sausage and go into the soup and you will end up with little lumps that taste like the shadow of sausage. You just want it to warm up, meld a bit flavor-wise, and retain its flavor and texture.
