Cheese Soufflé

Oh my goodness I love cheese soufflé. I think my friends can vouch for how delicious this recipe is, too.

Some things to keep in mind:

  1. Whipping the egg whites is what creates the airy texture and structure of a soufflé.
  2. It is important not to over mix when you get to the folding stage. Over mixing will cause the soufflé to lose fluffiness. This is because you will mix out the air that is being held in the fluffy egg whites.
  3. It is also important not to look in the oven too much. Maintaining temperature while baking also helps to keep the soufflé airy and light.
  4. Serving immediately is necessary. Waiting too long lets the hot air out of the soufflé causing it to fall. 

This dish makes a wonderful light dinner. I usually pair it with a tasty salad.
